Ingredients
For chilli paste:
- 10 dried red chilli (soaked)
- 4 cloves garlic
For fried rice:
- 2 tbsp oil
- 5 cloves garlic (finely chopped)
- 2 dried red chilli (broken)
- 1 inch ginger (chopped)
- ½ onion (finely chopped)
- 10 beans (chopped)
- 2 tbsp sweet corn
- ½ capsicum (chopped)
- 1 carrot (chopped)
- 2 tbsp spring onion (chopped)
- 4 cup cooked rice
- ½ tsp pepper powder
- 1 tsp salt
- 2 tbsp vinegar
- 2 tbsp soy sauce
- 2 tbsp tomato sauce
- 2 tbsp spring onion (chopped)
Method
- Firstly, in a mixer jar take 10 soaked dried red chilli, 4 cloves garlic and grind them to a smooth paste. Make sure to soak the dried red chilli till it softens. Keep aside.
- In a wok heat, 2 tbsp oil. Add 5 cloves garlic, 2 dried red chilli and stir fry till the garlic turns golden brown.
- Add 1 inch ginger and saute well.
- Also, add ½ onion and saute until the onion softens.
- Further, add prepared chilli garlic paste and cook till the oil separates.
- Add 10 beans, 2 tbsp sweet corn, ½ capsicum, 1 carrot, 2 tbsp spring onion, and stir until the vegetables turn crunchy.
- Add in 4 cup cooked rice, ½ tsp pepper powder, 1 tsp salt, 2 tbsp vinegar, 2 tbsp soy sauce, 2 tbsp tomato sauce and 2 tbsp spring onion.
- Stir fry and mix until the rice is well combined with the sauce.
