Ingredients
- 2 1/4 cups all purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 teaspoons ground ginger
- 1 teaspoon cinnamon powder
- 3/4 teaspoon ground cloves
- 12 tablespoons unsalted butter (at room temperature)
- 1/2 cup light brown sugar
- 1/2 cup granulated white sugar
- 1 large egg (at room temperature)
- 1/3 cup molasses
- turbinado sugar (for rolling)
Method
- In a bowl whisk together flour, baking soda, salt, cinnamon powder, ground ginger and ground cloves. Set aside.
- To your mixing bowl add room temperature butter with both the sugars.
- Cream butter with both sugars till well combined, scraping down the sides as required.
- Add egg and molasses and mix to combine.
- Add the flour mix and mix using the paddle attachment of your stand mixer. The dough will come together on it's down. If using a hand mixer, you might need to use your hands to bring it all together.
- Cover and keep the dough in the refrigerate for 20-30 minutes.
- Take out the dough from the refrigerator and shape round balls - 15-16 balls of 2 oz each.
- Roll into turbinado sugar. Press the balls slightly and place on a baking sheet 2 inch apart.
- Bake at 350 F for 10 minutes. Remove from oven and, let them sit on the baking sheet for 5 minutes, then transfer to wire rack to cool completely.
