Ingredients

  • 2 1/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 teaspoons ground ginger
  • 1 teaspoon cinnamon powder
  • 3/4 teaspoon ground cloves
  • 12 tablespoons unsalted butter (at room temperature)
  • 1/2 cup light brown sugar
  • 1/2 cup granulated white sugar
  • 1 large egg (at room temperature)
  • 1/3 cup molasses
  • turbinado sugar (for rolling)

Method

  1. In a bowl whisk together flour, baking soda, salt, cinnamon powder, ground ginger and ground cloves. Set aside.
  2. To your mixing bowl add room temperature butter with both the sugars.
  3. Cream butter with both sugars till well combined, scraping down the sides as required.
  4. Add egg and molasses and mix to combine.
  5. Add the flour mix and mix using the paddle attachment of your stand mixer. The dough will come together on it's down. If using a hand mixer, you might need to use your hands to bring it all together.
  6. Cover and keep the dough in the refrigerate for 20-30 minutes.
  7. Take out the dough from the refrigerator and shape round balls - 15-16 balls of 2 oz each.
  8. Roll into turbinado sugar. Press the balls slightly and place on a baking sheet 2 inch apart.
  9. Bake at 350 F for 10 minutes. Remove from oven and, let them sit on the baking sheet for 5 minutes, then transfer to wire rack to cool completely.
