Ingredients

Caramel Pecan Sauce

  • ¾ cup unsalted butter [1.5 sticks butter]
  • ⅔ cup heavy cream
  • ¾ cup brown sugar
  • ¾ cup toasted pecans (chopped)
  • pinch of salt

Brownies

  • ½ cup unsalted butter
  • 2 tablespoons vegetable oil
  • ¾ cup all purpose flour
  • ⅔ cup unsweetened cocoa powder
  • 1 cup granulated white sugar
  • 2 teaspoons vanilla
  • ½ teaspoon salt
  • ½ cup semi-sweet chocolate chips
  • 2 eggs
  • ¾ cup caramel pecan sauce

Method

Caramel Pecan Sauce

  1. Preheat oven to 350 F degrees.
  2. Roast roughly chopped pecans for 7-8 minutes in a 350 F degree pre-heated oven.
  3. In a saucepan on medium heat, mix together heavy cream, butter, brown sugar and pinch of salt.
  4. Keep stirring till the mixture is all smooth and comes to a boil.
  5. Lower the heat and let the sauce simmer for 4-5 minutes till it becomes slightly thick.
  6. Let the sauce cool down a bit and then add the toasted pecans into it.

Brownies

  1. Preheat oven to 350 F degrees.
  2. Line a 8 X 8 inch square pan with aluminium foil with overhanging edges. Set aside.
  3. Melt the butter in a pan on stove top. You can also melt it in the microwave.
  4. Once the butter is melted transfer it to a bowl and let it cool down a bit for 7-8 minutes.
  5. Now add sugar, vanilla and oil to the melted butter and mix till well combined.
  6. Add eggs, one at time, mixing after each addition.
  7. Mix in the all purpose flour and cocoa powder till well combined.
  8. Stir in the semi-sweet chocolate chips.
  9. Transfer half of the brownie batter into the pan, spreading it well so that it covers the entire pan.
  10. Pour caramel sauce over the brownie batter so that it's fully covered with the sauce.
  11. Pour the remaining brownie batter over the sauce. Spread as much as possible, it's ok if you are not able to cover the entire sauce with the batter.
  12. Bake at 350 F degrees for 40 minutes.
  13. Take out of the oven and let the brownies cool down completely before cutting them into squares.
  14. Dust with some powdered sugar and enjoy!
