Candied Kumquats

Ingredients

  • 350g kumquats, scrubbed, halved crosswise, and seeded
  • 400g sugar (about 2 cups)
  • 1 Tbsp. light corn syrup

Steps

  1. Cut the kumquats into rounds. Heat 2 cups water with the sugar and corn syrup in a saucepan over medium heat, bringing it to a simmer and stirring occasionally to dissolve the sugar. Add the kumquats, lower the heat and simmer gently over medium-low until the rinds turn translucent, about 10 minutes. Take off the heat and let the fruit cool in its syrup. Refrigerate in an airtight container with its liquid; it will keep for at least a month.
