Ingredients

  • For agave based condensed milk:
  • 1/3 cup agave syrup
  • 1 cup warm, not boiling water
  • 1 cup powdered full milk
  • For sugar based condensed milk:
  • 2/3 cup cane sugar
  • 2 cups full milk

Steps

  1. For the agave version, gradually whisk the milk powder into warm water. Whisk in the agave syrup, then pour into a cup-size mason jar. It stays fresh for a week.
  2. For the sugar version, stir the sugar and milk together, then put the pan on a small burner over low flame. Measure the depth with a dipstick; the reported starting depth was 2”. Simmer until the volume is halved, which measured 1” on that dipstick and equalled one cup of condensed milk. Do not overheat, as the sugar will caramelize. The reported preparation took more than two hours on a gas stove over low flame.
  3. Pour into a mason jar, close tightly with a fresh lid, and leave upside down until cooled. Immediately scrub the saucepan thoroughly to remove sticky syrup and the scalded-milk coating.
