Ingredients
for stuffing:
- ½ onion (finely chopped)
- ½ carrot (grated)
- 3 tbsp sweet corn
- 2 tbsp green capsicum (chopped)
- 2 tbsp red capsicum (chopped)
- 1 cup mozzarella cheese (grated)
- 2 tbsp coriander (finely chopped)
- 1 tsp chilli flakes
- 1 tsp mixed herbs
for slurry:
- ¾ cup corn flour
- ½ cup maida
- ½ tsp pepper powder
- ½ tsp mixed herbs
- ¼ tsp salt
- ¾ cup water
other ingredients:
- 7 bread (white or brown)
- 7 tsp green chutney
- 7 tsp tomato sauce
- 1 cup pako bread crumbs
- oil (for frying)
Method
- firstly, in a large bowl take ½ onion, ½ carrot, 3 tbsp sweet corn, 2 tbsp green capsicum and 2 tbsp red capsicum.
- add 1 cup mozzarella cheese or cheese of your choice. since the cheese has salt, i have not added any extra salt here.
- also add 2 tbsp coriander, 1 tsp chilli flakes and 1 tsp mixed herbs.
- mix well making sure everything is well combined.
- further, to prepare the slurry, in a large bowl take ¾ cup cornflour and ½ cup maida.
- also, add ½ tsp pepper powder, ½ tsp mixed herbs and ¼ tsp salt.
- now add ¾ cup water and mix well forming a smooth lump-free batter. keep aside.
- further, take a bread slice and trim off the sides. cut the bread into a triangle.
- now spread 1 tsp green chutney on half the slice and on other half spread tomato sauce.
- place a tbsp of prepared cheese stuffing.
- cover with other slice. press and seal the sides making sure it is well secured.
- now dip into cornflour slurry, making sure to coat uniformly.
- roll into bread crumbs to get the crispy outer coating.
- deep fry in hot oil, keeping the flame on medium.
- stir and fry on both sides until the bites turn golden brown and crisp.
