Ingredients

  • 3 cups rolled oats [not quick oats]
  • 1 cup whole almonds
  • ⅓ cup maple syrup
  • 3 tablespoons coconut oil
  • 2 teaspoons vanilla extract
  • ¼ teaspoon almond extract
  • ¼ teaspoon salt
  • ¼ teaspoon cinnamon
  • ½ cup raisins
  • ½ teaspoon pumpkin pie spice [optional]

Method

  1. Preheat oven to 325 F degrees.
  2. Line a baking sheet with silicon mat or parchment paper. Set aside.
  3. In a bowl toss together oats, almonds, salt, cinnamon powder and pumpkin pie spice [if using]
  4. In a small pan, heat together maple syrup, coconut oil, vanilla extract and almond extract.
  5. Heat for 2 minutes till the liquids appear smooth.
  6. Pour wet ingredients into the oats mixture and mix till all the oats are moistened.
  7. Transfer the granola onto the prepared baking sheet.
  8. Bake at 325 F degrees for 30-35 minutes, stirring after every 10 minutes.
  9. Allow the granola to cool for an hour.
  10. Add the raisins and give a final mix.
  11. Store the granola in an airtight container at room temperature for 1-2 weeks.
