Ingredients

  • 3 medium beets ((or 4 small beets), about 1 pound)
  • 2 teaspoons extra-virgin olive oil
  • salt (to taste)
  • pepper (to taste)

Method

  1. Firstly wash and clean the beetroot with water and pat them dry. Peel the beets and cut into medium sized pieces, roughly the same size for even cooking.
  2. Transfer the beetroot to a medium sized bowl. Add olive oil and season with salt, and pepper. Toss them well, so they are all coated with the seasoning.
  3. Preheat the air fryer to 375 ° F (190°C). Add the seasoned beets to the basket of air fryer and spread them in a single layer (cook in batches if required).
  4. Air fryer them at 375 ° F (190°C) for 14-16 minutes or until they are fork tender. Shake the basket halfway through. Mine was cooked perfectly in 14 minutes.
  5. Roasted Beets is ready. Serve them immediately with a tasty dipping sauce on the side.

Oven Method

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper. Spread the seasoned beets evenly in a single layer. Bake at 400˚F for 20-25 minutes, tossing occasionally or until beets are fork tender.
