This Air Fryer Roasted Beets recipe is so easy to make and delicious. Great side dish or a salad topper and is vegan/vegetarian, whole30, paleo-friendly.

Ingredients
- 3 medium beets ((or 4 small beets), about 1 pound)
- 2 teaspoons extra-virgin olive oil
- salt (to taste)
- pepper (to taste)
Method
- Firstly wash and clean the beetroot with water and pat them dry. Peel the beets and cut into medium sized pieces, roughly the same size for even cooking.
- Transfer the beetroot to a medium sized bowl. Add olive oil and season with salt, and pepper. Toss them well, so they are all coated with the seasoning.
- Preheat the air fryer to 375 ° F (190°C). Add the seasoned beets to the basket of air fryer and spread them in a single layer (cook in batches if required).
- Air fryer them at 375 ° F (190°C) for 14-16 minutes or until they are fork tender. Shake the basket halfway through. Mine was cooked perfectly in 14 minutes.
- Roasted Beets is ready. Serve them immediately with a tasty dipping sauce on the side.
Oven Method
- Preheat the oven to 400°F and line a baking sheet with parchment paper. Spread the seasoned beets evenly in a single layer. Bake at 400˚F for 20-25 minutes, tossing occasionally or until beets are fork tender.
