  • ½ teaspoon ground allspice
  • ¼ teaspoon ginger powder (ground ginger)
  • ¼ teaspoon grated nutmeg or ground nutmeg

For Apple Puree

  • 2 cups chopped apples – 300 grams or 2 medium -sized
  • ¾ cup raw sugar – 150 grams

Other Ingredients

  • ½ cup water or any nut milk – at room temperature
  • ¼ cup oil – use oil which has a neutral taste and flavor
  • 1 teaspoon vanilla extract
  • 1 tablespoon apple cider vinegar or lemon juice or white vinegar

Steps

Sifting dry ingredients

  1. Put the flour, salt, ground spices, baking soda and baking powder together in a sieve.
  2. Pass the dry mixture through the sieve twice, then set it aside.
  3. Coat a round 7.5 to 8-inch pan with neutral-flavored oil by brushing or greasing it. You can also line the pan with parchment. Heat the oven to 190 degrees Celsius (375 degrees Fahrenheit) ahead of baking, allowing 20 minutes for preheating.

Making apple puree

  1. Put the chopped apples, already rinsed, cored and peeled, into a blender jar or container with the raw sugar.
  2. Blend until the purée is smooth and no chunks remain.
  3. Transfer the apple purée to a mixing bowl using a spatula.

Making liquid mixture

  1. To the purée, add the oil, water, vanilla extract and either apple cider vinegar or lemon juice.
  2. Stir briskly with a wire whisk for 2 to 3 minutes, until the oil is evenly incorporated.
  3. Tip the sifted dry ingredients into the wet mixture.

Mixing dry ingredients

  1. Use light pressure from your hands to gently mix the dry ingredients into the wet mixture. Avoid overworking the batter, which should feel light and have volume.
  2. At this stage, the batter has a moderately flowing consistency.
  3. If you see any large flour lumps, tap them with a wire whisk to break them up. Tiny lumps are fine.
  4. Pour the batter into the pan you prepared.

Baking apple cake

  1. Put the cake in the preheated oven at 190 degrees Celsius (375 degrees Fahrenheit) and bake for about 50 minutes to 1 hour.
  2. Oven temperatures vary, so use a toothpick to check for doneness once the top looks golden.
  3. Test the cake with a wooden skewer. It should come out clean, with no sticky batter clinging to it.
  4. Set the baking pan on a wire tray and let the apple cake cool at room temperature.
  5. Once the cake has cooled, gently free it from the pan with a butter knife.
  6. Cut the apple cake into slices and enjoy them at room temperature with tea or coffee.

Storage and Leftovers

  1. Refrigerate the cake tightly wrapped in cling film or in an airtight container. Leftover apple cake can be kept in the refrigerator for a week or in the freezer for a month.
