Ingredients

  • 1 cup whole wheat flour – leveled – 120 grams
  • ½ teaspoon baking powder
  • ½ cup raw sugar or white sugar – 80 grams
  • ½ cup water
  • ¼ cup olive oil or any neutral oil
  • ¼ cup lemon juice – juice extracted from 1 large lemon or 2 medium lemons or 3 medium limes
  • 1 to 1.5 tablespoons lemon zest

Steps

Preparation

  1. Line a muffin pan with liners, or grease it with oil instead.
  2. Rinse a large lemon and wipe it dry. Use a zester or grater to remove only the yellow or green peel, leaving the white pith behind. Set the zest aside and preheat the oven to 180 degrees Celsius or 356 degrees Fahrenheit.
  3. Cut the lemon in half and squeeze out the juice. Expect about ¼ cup, and measure it because the recipe requires ¼ cup.

Making Batter

  1. Pour the lemon juice into a mixing bowl or pan.
  2. Put the raw sugar in with the lemon juice.
  3. Pour in the water and stir with a wire whisk until all the sugar granules dissolve in the lemon mixture.
  4. Add the olive oil, then whisk briskly with a wire whisk for 2 to 3 minutes to distribute the oil evenly through the lemon juice and sugar mixture.
  5. Set a sieve on a plate or tray and put the whole wheat flour and baking powder into it.
  6. Sift the dry ingredients onto the surface beneath the sieve.
  7. Add the dry ingredients to the wet mixture, then add the lemon zest.
  8. Stir lightly and quickly until everything is well combined. Avoid overmixing.
  9. Pour the batter into the muffin liners, filling them up to ⅔.

Baking Lemon Muffins

  1. Bake the muffins at 180 degrees Celsius (356 degrees Fahrenheit) for 20 to 25 minutes. Check them as they bake because oven temperatures vary.
  2. Check that a toothpick or bamboo skewer comes out clean after you insert it into the muffins.
  3. After 4 to 5 minutes, transfer the lemon muffins to a wire rack to cool. The recipe makes 8 medium-sized lemon muffins.
  4. Enjoy these egg-free lemon muffins as a sweet snack or dessert. You can also pack one or two in a tiffin box as a sweet side snack.
