Brown Rice Phirni
Ingredients
- 3 tbsp brown rice
- 4-5 cup milk
- 3 tbsp or to taste sugar (jaggery can be used)
- 9-10 saffron threads soaked in milk
- 1/2 tsp cardamom powder
- 7-8 almonds, cashews and pistachios (chopped)
- 1 tbsp raisins
Steps
- After washing the brown rice, soak it for 2-3hours. Drain away the water, then grind the rice coarsely; it must not become a thin paste.
- Chop the dry fruits into small pieces, and put the saffron threads in some warm milk to soak.
- Bring the milk to a boil in a heavy-bottomed pan. Add the ground brown rice once it boils, then cook over low heat, stirring continuously to keep the mixture free of lumps.
- Continue cooking until the rice is completely cooked.
- Stir in the saffron milk, sugar and some chopped nuts. Keep cooking until the mixture thickens, then mix in the cardamom powder well.
- Turn off the heat and leave the phirni to cool.
- Finish with chopped dry fruits as a garnish, and serve as you prefer.
