Ingredients

  • 1 1/2 cups All Purpose Flour or Maida
  • 1/2 cup Rice Flour or Chawal ka Aata
  • 1 tsp grated Ginger
  • 1 cup chopped Spring Onions
  • 1/4 cup Fresh Coconut pieces
  • 2-3 finely chopped Green Chillies
  • 2 sprigs torn Curry Leaves
  • 1 small bunch chopped Coriander Leaves
  • 1 cup Sour Curd
  • 1/4 tsp Baking Soda
  • 1 tsp crushed Cumin Seeds
  • as needed Water
  • as needed Oil for frying

Steps

  1. Make the batter thick, smooth and fluffy by mixing all the ingredients together, adding some water if required. Let it stand aside for 20 minutes or so.
  2. Heat enough frying oil over medium high heat. Wet your hands a little before dropping small balls of equal size into it, either by hand or with a spoon.
  3. Deep-fry in batches, usually over a low to medium flame; the oil should still be sizzling hot. Cook both sides well until golden.
  4. Serve with coconut chutney while the bajji are hot.
