Ginger Cookies
Ingredients
- 200 g butter
- 3/4 cup maple syrup
- 3/4 cup brown sugar
- 2 Tbsp fresh ginger
- 3 cups self-rising flour
- 3 Tbsp ginger powder
- 2 tsp bicarbonate soda
- 2 egg yolks
- Castor sugar (for rolling and coating cookie dough)
Steps
- Set the oven to preheat to 180C. Prepare the cookie sheet by lining it with parchment, then set it aside.
- Use the microwave, or a stovetop over medium heat, to melt the butter, syrup, and sugar. Stir in the ginger and set aside to cool.
- Set the dry ingredients aside after whisking them together.
- Add the egg yolks to the cooled mixture and whisk, then combine it fully with the dry mixture.
- Spoon the dough onto your palms, roll into sizable balls, coat by rolling in castor sugar, and arrange on the cookie sheet.
- Bake for 8 – 10 minutes, taking the size and desired texture into account. A shorter bake keeps the centers chewy and the edges crisp.
