Ingredients

  • 2 pounds bone-in skin-on turkey thighs (about 2 thighs)
  • 1/2 cup minced onion
  • 1/4 cup chopped fresh cilantro
  • 2 minced garlic cloves
  • 2 teaspoons chopped jalapeño or serrano chile with seeds
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon freshly ground black pepper
  • Kosher salt

Steps

  1. Cut the turkey meat into 1" cubes and discard the skin and bones. Lay in a single layer on a rimmed baking sheet, cover with plastic wrap and put in the freezer until very cold, about 15 minutes: it should feel firm but still yield under a finger. Meanwhile, freeze all the grinding parts until very cold for at least 15 minutes—the stand mixer's grinding attachment including dies, or the food processor's bowl and blade. Fit the grinder attachment with the chilled coarse die. Put a bowl inside a large bowl of ice beneath the attachment to catch the ground turkey and keep it cold.
  2. Move the turkey into a medium bowl and mix with onion, cilantro, garlic, jalapeño or serrano chile, coriander, cumin, paprika and freshly ground black pepper. Grind this mixture in batches with the mixer on medium speed, plunging gently to push it through.
  3. Shape four 1/2"-thick patties and season with kosher salt and freshly ground black pepper. Grill over medium heat for 5-7 minutes per side, until cooked through.
