Ingredients

  • 5 cups vegetable oil for frying, or as needed
  • 0.5 cup cornstarch, or more as needed
  • 2 pounds skinless, boneless chicken breast
  • 2 teaspoons salt
  • 2 teaspoons garlic powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon cayenne pepper

Steps

  1. In a deep saucepan, bring 2 inches of oil to heat over medium heat. Put the cornstarch in a bowl.
  2. Cut the chicken into pieces 1/2-inch thick. Put in a bowl and mix with the salt, garlic powder, black pepper and cayenne.
  3. Separate the chicken into 2 or 3 portions. Dredge in cornstarch until evenly coated and entirely white, using more cornstarch if needed.
  4. Carefully lower batches of chicken into the hot oil and fry about 1 minute on each side, until crisp outside and no longer pink in the center. Move to a paper towel-lined plate to drain and serve hot.
