Maddur Vada Recipe | Crispy Maddur Vade – Tea Time Snack
Ingredients
- 1 onion, sliced
- 2 chilli, finely chopped
- 1 inch ginger, chopped
- 2 tbsp coriander, finely chopped
- 1 cup rice flour
- 1 cup maida
- ½ cup rava, coarse
- 2 tbsp sesame
- 2 tbsp roasted peanuts, crushed
- pinch hing
- 1 tsp salt
- water, for kneading
- oil, for frying
Steps
- Put 1 onion, 2 chilli, 1 inch ginger and 2 tbsp coriander into a bowl.
- Follow with 1 cup rice flour, 1 cup maida and ½ cup rava.
- Put in 2 tbsp sesame, 2 tbsp roasted peanuts, a pinch of hing and 1 tsp salt as well.
- Crumble the mixture and mix thoroughly until everything is combined.
- Mix in 2 tbsp hot oil; this helps make the vada crunchy.
- Work in the water slowly while kneading the dough.
- Do not add more water, since the dough must be tight.
- Pinch off a ball-sized piece of dough, press it and flatten to a slightly thick shape.
- Deep-fry in hot oil over a medium flame.
- Leave untouched for 2 minutes, as the vada may otherwise break.
- Stir occasionally while frying both sides to a golden brown.
- Drain away the excess oil.
- Enjoy the Maddur Vada with coconut chutney.
