Ingredients

  • 3 Yorkshire tea bags
  • 400 ml boiled water
  • 10 oz mixed dried fruit
  • 12 oz self-raising flour
  • 3 oz sugar (more to taste)
  • 1 egg
  • 1 tsp mixed spice
  • 1 capful of spiced rum (totally optional)

Steps

  1. Put the boiled water and tea bags into a jug and stir. Add all the dried fruit and leave to soak in the strong tea for 30 minutes.
  2. Set the oven to preheat at gas mark 4.
  3. Pass the flour, sugar, and mixed spice through a sieve into a mixing bowl.
  4. Whisk the egg, then add it to the dry ingredients with all the tea and fruit from the measuring jug, removing the tea bags and squeezing out any remaining liquid.
  5. Mix everything until fully combined. Mix in a cap or splash of spiced rum if using. Line the cake tin with greaseproof paper, put the mixture into it, and bake for 40-45 minutes.
  6. When cooked, check the cake with a toothpick: it should come out dry, showing the cake is cooked through. Cool for 10 minutes, then take out of the tin, peel away the baking paper, and place on a cooling rack.
