Ingredients

  • 1 small seedless watermelon (about 8 lb.)1 1/2 cups lemon-lime soda
  • 1 1/2 cups lemon-lime soda
  • 1 cup soju
  • 6 tbsp. fresh lemon juice
  • 2 Tbsp. Campari
  • 1/4 tsp. kosher salt
  • 1/4 cup sweetened condensed milk
  • 1/4 cup whole milk
  • 1 cup frozen blueberries
  • Mint sprigs, for garnish

Steps

  1. Cut off and discard top quarter of watermelon. Scoop out about 2 cups of watermelon balls using a melon baller. Set watermelon balls aside. Scoop out remaining flesh until watermelon is hollow; place flesh in a blender. Position hollowed watermelon in a shallow bowl to keep steady and upright; set aside.
  2. Process watermelon in blender until smooth, about 20 seconds. Pour through a fine wire-mesh strainer set over a bowl. Transfer 2 cups strained watermelon juice to a large pitcher or bowl.
  3. Add soda, soju, lemon juice, Campari, and salt to pitcher, stirring until combined. Stir in condensed milk; add whole milk in a thin, steady stream while stirring constantly (to prevent curdling) until well combined.
  4. Place ice, frozen blueberries, and reserved watermelon balls in hollowed- out watermelon. Fill with watermelon juice mixture; garnish with mint. Ladle into ice- filled glasses, and serve.
