Ingredients

  • 1.5 cup basmati rice
  • 4 cup water
  • Salt as per taste
  • 1 tsp oil
  • 2 tbsp oil
  • 1 tsp finely chopped ginger
  • 8-10 finely chopped garlic cloves
  • 1 medium size finely chopped onion
  • 1 medium size finely chopped carrot
  • 1/2 cup finely chopped french beans
  • 1 small size finely chopped green capsicum
  • 1/2 finely chopped red capsicum
  • 1/2 finely chopped yellow capsicum
  • 1/2 cup finely chopped cabbage
  • 1/2 tsp salt
  • 1 pouch chings schezwan fried rice masala
  • Green coriander leaves as per required
  • Onion rings as per required

Steps

  1. After cleaning the basmati rice, soak it in clean water for 20 minutes.
  2. Heat the water in a pan, then add the soaked rice, salt and oil. Cook over a medium flame until 90% done. Put the cooked rice into a bowl, drain away all the water, then transfer it to a large plate to cool.
  3. Leftover rice is another option, or cook the rice in advance and use it a few hours later.
  4. Heat oil in a pan and sauté the finely chopped garlic and ginger. Add the finely chopped onion and french beans and sauté for a while over a high flame.
  5. Add the finely chopped bell peppers, carrot and cabbage, sautéing over a high flame. Keep the vegetables slightly crunchy rather than cooking them too much. Mix in the cooked rice thoroughly.
  6. Mix in the Chings masala and salt; no other spices or sauces are needed. Cook for some time over a medium flame, then switch off.
  7. The vegetable Schezwan fried rice is ready. Garnish with green coriander leaves and onion rings and serve.
