ukkarisida akki rotti | akki ubbu rotti
Ingredients
- 2 cup water
- 1 tsp oil
- ½ tsp salt
- 2 cups rice flour, finely ground
Steps
- Put 2 cups water, 1 tsp oil and ½ tsp salt in a large kadai.
- Bring the water to a boil.
- Add 2 cups of rice flour and stir gently. It is fine if the mixture has lumps.
- Cover the kadai and simmer the mixture for 2 minutes, until it has absorbed the water well.
- The mixture will be very moist at this point.
- Move the rice flour mixture into a large bowl.
- Once the mixture is warm, dip your hands in water and begin kneading.
- Continue kneading until you have a smooth, soft dough.
- Take a ball-sized portion of dough and give it another knead.
- Sprinkle rice flour on the rolling board so the dough does not stick.
- Dust the dough with rice flour before you begin to roll it gently.
- If needed, dust with more flour, then roll to an even thickness. Move the rolled rotis onto a hot tawa.
- Use a damp cloth to wipe away the flour. Wiping one side is enough.
- When the underside is partly cooked, turn the roti over and cook the other side.
- Cook both sides only partway, since the roti will cook directly over the flame later.
- Place the roti directly over the flame and let it puff up.
- The ukkarisida rotti or ubbu rotti is now ready to enjoy with ennegayi.
