Steps
How to make Ugadi Pachadi
- Wash the tamarind and soak in ½ cup warm water until soft.
- Use fresh neem flowers as the traditional choice; if fresh flowers are unavailable where you live, use dried flowers.
- As the tamarind soaks, pluck the flowers from the neem sprigs. Alternatively, put the sprigs in a thin cloth and gather its edges so the sprigs stay inside.
- Grip the cloth edges tightly and strike the cloth against the kitchen counter several times. Collect the neem flowers or petals that separate from the sprigs into the cloth and set aside.
- Stir grated jaggery into another cup of water until dissolved. Pour through a coffee strainer into another bowl, then strain the tamarind pulp or water into that same bowl.
- Mix in the remaining ingredients thoroughly.
- If offering the pachadi to god, do not taste it first. Offer it as naivedyam.
- Share the ugadi pachadi with family and friends.
