Tropical Punch Popsicles made with pineapple juice and fresh fruits! A refreshing summer treat!

Ingredients
- 1 cup pineapple juice
- ¼ teaspoon coconut extract (adjust to taste)
- 1 kiwi (cut into thin rounds)
- 3 strawberries (cut into slices)
- 12 blueberries
- 5-6 pineapple pieces (small)
Method
- Peel and cut the kiwi into thin circles.
- Also slice the strawberries and set aside.
- In a bowl take 1 cup of pineapple juice, add coconut extract to it and mix. Adjust the quantity of the extract according to how strong you want the coconut flavor. [Tip: start with 1/8 teaspoon and add more as required].
- Take your popsicle mold and add your choice of fruits to them. You can use any fruit of your choice, I used blueberries, strawberries, pineapple and kiwi.
- Fill the popsicle molds with the prepared pineapple juice.
- Cover the molds and insert the stick.
- Freeze for 6-8 hours or till completely set.
- To demold, place the molds under hot water for 30 seconds and pull gently.
