Tropical Punch Popsicles made with pineapple juice and fresh fruits! A refreshing summer treat!

Ingredients

  • 1 cup pineapple juice
  • ¼ teaspoon coconut extract (adjust to taste)
  • 1 kiwi (cut into thin rounds)
  • 3 strawberries (cut into slices)
  • 12 blueberries
  • 5-6 pineapple pieces (small)

Method

  1. Peel and cut the kiwi into thin circles.
  2. Also slice the strawberries and set aside.
  3. In a bowl take 1 cup of pineapple juice, add coconut extract to it and mix. Adjust the quantity of the extract according to how strong you want the coconut flavor. [Tip: start with 1/8 teaspoon and add more as required].
  4. Take your popsicle mold and add your choice of fruits to them. You can use any fruit of your choice, I used blueberries, strawberries, pineapple and kiwi.
  5. Fill the popsicle molds with the prepared pineapple juice.
  6. Cover the molds and insert the stick.
  7. Freeze for 6-8 hours or till completely set.
  8. To demold, place the molds under hot water for 30 seconds and pull gently.
  9. Enjoy!
