Telur Sambalado 🌶️🌶️🌶️🌶️🌶️
Ingredients
- 12 –15 boiled eggs
- Oil for frying
- 3 –5 kaffir lime leaves (daun jeruk)
- 8 –10 red chilies
- 4 shallots
- 3 cloves garlic
- 1 tomato
- 1 tsp salt
- 1-2 tsp sugar
- 1 tsp chicken stock (optional)
- 1 tbsp kecap manis (soy sauce) optional
- 1 little water
Steps
- Boil eggs until hard, peel and set aside.
- Lightly fry until the surface is a bit golden (like yours 👌). Set aside.
- Blend chilies, shallots, garlic, and tomato (not too smooth, better a bit chunky like yours).
- Heat oil, sauté the sambal until fragrant and thick. You’ll see the oil separating, that’s the key
- Toss in kaffir lime leaves for that fresh aroma.
- Add salt, sugar, and chicken stock. Adjust taste (should be spicy, a bit sweet, and savory).
- Add eggs and gently coat with the sambal. Add a little water if needed
- Cook until the sauce thickens and sticks to the eggs beautifully.
