Ingredients

  • 1 kg mussels or 400 Gr Mussel Meat (I used today as no fresh ones)
  • 50 ml olive oil
  • 25 ml white wine vinegar
  • 100 ml white wine
  • 1 tsp smoked paprika
  • 3 cloves garlic
  • 3 bay leaves
  • 1/2 Tsp Cayenne Pepper (Optional but I love spicy)

Steps

  1. Heat the wine in a pan with lid – then add the mussels and steam until they open around 3-5 minutes. Discard any that don't open and allow to cool. Then remove the meat from the shells into a bowl – I add the liquid as most has gone now.
  2. In a small pan heat the oil and add the garlic and bay leaves. Cook on medium until the garlic just starts to brown. Remove from heat for 1 min Add the paprika and cayenne if using, stir then add the vinegar slowly.
  3. Reheat the oil mix and cook off the vinegar for 2-3 mins. Add in the mussels. and coat. Then put into a dish with lid or jar. Allow to cool. Cover and then put into fridge for 2 days (Up to a week) then serve with toast or crisps to soak up those amazing juices. Enjoy:P
