Sprouts Kadhi Recipe (Kadhi For Diabetes)
Ingredients
- 1 cup mixed sprouts
- 2 tsp oil
- 1/2 tsp mustard seeds (rai / sarson)
- 1/2 tsp cumin seeds (jeera)
- 1/4 tsp asafoetida (hing)
- 2 whole dry Kashmiri red chilli, broken into pieces
- 1 bay leaf (tejpatta)
- 1/4 tsp haldi powder (turmeric powder)
- 1 tsp green chilli paste
- 1/4 tsp red chilli powder
- 1/4 tsp salt (namak)
- 1 1/2 cups whisked curds (dahi), made with cow's milk or low fat milk
- 4 tsp besan (gram flour)
Steps
- Put the mustard and cumin seeds into the pressure cooker once its oil is heated.
- When the seeds begin to crackle, add the asafoetida, broken red chillies and bay leaf. Sauté over a medium flame for a few seconds.
- Add the sprouts, 1½ cups water, turmeric, green chilli paste, chilli powder and salt. Mix thoroughly, then pressure-cook for 3 whistles.
- Open the lid only after the steam has escaped, then set the cooker aside.
- In a deep bowl, mix the curds and besan with ½ cup water until smooth and free of lumps.
- Mix the curds-besan mixture into the cooked sprouts mixture thoroughly. Cook over a medium flame for 3 to 4 minutes, stirring continuously.
- Serve the kadhi while hot.
