Ingredients

  • 1/2 cup sama rice barnyard millet
  • 4 cup milk full fat
  • 1 tablespoon raisins (optional)
  • 1 teaspoon cardamom powder
  • 8 teaspoon sugar
  • few strands saffron (optional)
  • 1 tablespoon cashew chopped
  • 1 tablespoon almond chopped
  • 1 tablespoon pistachio chopped

Steps

  1. Give the sama rice a thorough clean, then wash it 2-3 times and keep it ready.
  2. Before adding milk, heat a heavy-bottomed pan.
  3. Bring the milk to a boil. Using a heavy-bottomed pan helps prevent the milk or rice from burning on the bottom.
  4. As soon as the milk boils, add the sama rice and stir well. Let it cook over medium heat until the rice is cooked.
  5. Soaked rice cooks faster. Sama rice takes about 15-20 mins to cook; use it unsoaked unless time is limited.
  6. Let the rice cook in the milk so it takes on the milk's flavour.
  7. Stir at regular intervals to prevent the rice from burning at the bottom of the pan.
  8. After 10-15 mins, the grains of sama rice will have doubled in size and the kheer will thicken.
  9. Mix in cardamom powder, saffron strands and dry fruits thoroughly. Boil over low heat for another 3-4 min. Saffron is completely optional; the flavours of cardamom and saffron can sometimes blend together.
  10. Either cardamom or saffron is enough. Adjust the sugar to your taste and mix thoroughly until it dissolves.
  11. The sama rice kheer, also called vrat ke chawal ki kheer, is ready for serving.
  12. Enjoy it with a garnish of some chopped dry fruits.
  13. To check consistency, take kheer in a spoon and pour it back. It is ready at the right thickness if it drops together into the pan.
  14. Continue cooking over a low flame if the milk and rice separate.
  15. The sama rice or vrat ke chawal ki kheer can now be served.
  16. Choose either warm or chilled for serving.
