Quinoa Honey Nut Granola with sea salt, pumpkin seeds, dried cranberries, walnuts and cashews! This is my favorite homemade granola.

Ingredients
- 2 cups rolled oats
- 3/4 cup quinoa
- 2 teaspoons cinnamon powder
- 1/2 teaspoon sea salt
- 1 cup nuts (I used mix of walnuts and cashews)
- 1/4 cup pumpkin seeds
- 1/2 cup honey
- 4 tablespoons coconut oil
- 1/4 cup dried cranberries (optional)
Method
- Pre-heat oven to 325 F degrees. Prepare a baking sheet with parchment paper.
- In a pan whisk together honey and coconut oil. Put the pan on medium heat, till the mixture warms a bit and combines together.
- In a bowl toss together oats, quinoa, sea salt, nuts, pumpkin seeds and cinnamon powder.
- Pour the honey mixture over the oats-quinoa mixture. Mix till all mixture is moistened.
- Spread on a baking sheet evenly. Bake at 325 F degrees for 35 minutes. You can stir slightly once in between, I did not.
- Remove from oven. Let cool completely, break into clusters and stir in the cranberries (if using).
- Store the quinoa honey nut granola in an airtight container.
