Ingredients

  • 1 cup quinoa flour homemade
  • 2 tsp besan
  • 2 tsp curd
  • 2 tsp grated carrot
  • 2 tsp chopped onions
  • 2 tsp chopped tomatoes
  • 2 tsp chopped coriander
  • 1 tsp ginger chilli paste
  • 1/2 tsp jeera
  • 1/4 tsp hing
  • 1 tsp red chilli powder
  • 1/2 tsp turmeric powder
  • Salt to taste
  • Water as required
  • Oil to shallow fry

Steps

  1. Wash the whole quinoa in water 4 times to remove dust and its bitter taste. Rinse it thoroughly, then drain all the water through a strainer. Leave it to dry on a plate or a cloth. Heat a pan before adding the quinoa; roast it over a very low gas flame to remove all moisture. Let it cool completely before grinding it in a mixer. Strain the flour, grind the coarse flour again, then strain once more. Continue this process in the same way to make quinoa flour.
  2. With the quinoa flour and besan in a bowl, mix them thoroughly. Incorporate all the ingredients together with the curd, mixing well again.
  3. Add water as required to form the batter. After heating a pan and applying a little oil, pour a ladleful of batter onto the tawa and form a round chilla. Apply oil around its edges. When the chilla turns golden brown, flip it over and fry the other side in the same manner, then put it on a plate.
  4. Continue until all the chillas have been made. Serve them hot with chutneys or a cup of tea or coffee of your choice.
