Pumpkin Spice Brownies frosted with Pumpkin Spice Peanut Butter frosting!

Ingredients

Brownies

  • 10 tablespoons unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • 1 cup granulated white sugar
  • ½ cup all purpose flour
  • 2/3 cup Hershey's special dark cocoa powder
  • 1 teaspoon pumpkin spice powder
  • 2 large eggs
  • 1 egg yolk

Pumpkin Peanut Butter Frosting

  • 4 tablespoons salted butter (at room temperature)
  • 6 oz cream cheese (at room temperature)
  • ½ cup + ⅛ cup powdered sugar
  • ½ teaspoon cinnamon powder (optional)
  • 4 tablespoons pumpkin spice peanut butter
  • 1-2 teaspoons milk or heavy cream

Method

Brownies

  1. Preheat oven to 350 F degrees.
  2. Line a 8x8 inch square pan with aluminium foil with overhanging edges. Spray it with a nonstick spray and set aside.
  3. Melt butter in a pan on stove top or using the microwave.
  4. Once the butter is melted, transfer it to a bowl and let it cool down for 5 minutes.
  5. Add sugar and vanilla extract to the melted butter and mix till well combined.
  6. Now add eggs, egg yolk, one at a time mixing after each addition.
  7. Add in the all purpose flour, pumpkin pie spice and cocoa powder.
  8. Mix till everything is well combined and you have a smooth batter.
  9. Pour the remaining brownie batter in the prepared pan.
  10. Bake at 350 F degrees for 25-30 minutes or till a toothpick inserted in the center comes out clean.

Frosting

  1. While the brownies are in the oven, make the frosting by beating together cream cheese and butter till smooth.
  2. Add powdered sugar and pumpkin spice peanut butter, cinnamon powder and mix.
  3. Add milk and beat the frosting till it's smooth and creamy.
  4. Let the brownies cool completely, cut into squares, top with pumpkin spice peanut butter frosting & eat!
