Pumpkin Spice Brownies frosted with Pumpkin Spice Peanut Butter frosting!

Ingredients
Brownies
- 10 tablespoons unsalted butter (melted)
- 1 teaspoon vanilla extract
- 1 cup granulated white sugar
- ½ cup all purpose flour
- 2/3 cup Hershey's special dark cocoa powder
- 1 teaspoon pumpkin spice powder
- 2 large eggs
- 1 egg yolk
Pumpkin Peanut Butter Frosting
- 4 tablespoons salted butter (at room temperature)
- 6 oz cream cheese (at room temperature)
- ½ cup + ⅛ cup powdered sugar
- ½ teaspoon cinnamon powder (optional)
- 4 tablespoons pumpkin spice peanut butter
- 1-2 teaspoons milk or heavy cream
Method
Brownies
- Preheat oven to 350 F degrees.
- Line a 8x8 inch square pan with aluminium foil with overhanging edges. Spray it with a nonstick spray and set aside.
- Melt butter in a pan on stove top or using the microwave.
- Once the butter is melted, transfer it to a bowl and let it cool down for 5 minutes.
- Add sugar and vanilla extract to the melted butter and mix till well combined.
- Now add eggs, egg yolk, one at a time mixing after each addition.
- Add in the all purpose flour, pumpkin pie spice and cocoa powder.
- Mix till everything is well combined and you have a smooth batter.
- Pour the remaining brownie batter in the prepared pan.
- Bake at 350 F degrees for 25-30 minutes or till a toothpick inserted in the center comes out clean.
Frosting
- While the brownies are in the oven, make the frosting by beating together cream cheese and butter till smooth.
- Add powdered sugar and pumpkin spice peanut butter, cinnamon powder and mix.
- Add milk and beat the frosting till it's smooth and creamy.
- Let the brownies cool completely, cut into squares, top with pumpkin spice peanut butter frosting & eat!
