Ingredients

  • 1 Medium Root (larger can be more spicy) mine was approx 150 gr after peeled
  • 1/2 Tsp Salt
  • 1/2 Tsp White Vinegar
  • 300 gr Sour Cream
  • 1 Tbsp Whipping Cream – Optional

Steps

  1. Put the root in some warm water for 5 mins – this just softens the tough skin so easier to peel
  2. Pat dry and peel. I find it easiest laying the root on a chopping board and scraping the peeler down its length.
  3. Use a food processor (you can buy hand but it is worse than peeling onions) and grate the root. Transfer to a bowl and then add the chopping blade.
  4. Add a splash of water (about 1-2 Tbsp) and pulse until fine shopped. The finer the more spicy. Let it still for at least 2 min or up to 10 mins again the longer the more spicy.
  5. Add vinegar and salt and pulse to combine. You can now put into a jar until ready to use.
  6. Mix root, cream cheese and cream in a bowl and blend together – taste to season with a little more salt if needed. I make about half at a time (so half the sour cream etc) and use it all before making more:P ENJOY:P
