Ingredients

  • 2 cups lightly toasted unsalted shelled peanuts
  • 1 cup sugar
  • 1 cup light corn syrup
  • 1 tablespoon baking soda

Steps

  1. Cover a large baking sheet with parchment and butter the paper. In a heavy large saucepan over medium heat, stir the peanuts, sugar and corn syrup until the sugar has dissolved. Turn the heat to high and boil, stirring frequently, to a candy-thermometer reading of 295°F, about 20 minutes. Take the pan off the heat and briskly stir in the baking soda until blended; the mixture will foam up. Pour it immediately onto the prepared sheet, spread to an even layer and leave it until cold and hard.
  2. Break the hardened brittle into pieces and keep them in airtight containers at room temperature. It may be made 1 month in advance.
