Paradise Freeze
Ingredients
- 3 cups granulated sugar, divided
- 2 cups water, divided
- 1 cup chopped ripe mango, fresh or thawed if frozen, plus more for garnish
- 1 tablespoon fresh lime juice
- 1 cup chopped strawberries, fresh or thawed if frozen, plus more for garnish
- 1 (13.5-ounce) can unsweetened coconut milk
- 1 cup ice
- 1/4 cup vanilla ice cream
- 1 teaspoon sweetened condensed milk
Steps
- Bring 1 cup sugar, 1 cup water, and 1 cup mango to a simmer in a medium saucepan over medium-high, stirring occasionally. Reduce heat to medium-low to maintain a gentle simmer; simmer, stirring occasionally, for 15 minutes. Strain mango mixture through a fine-mesh sieve set over a small, heatproof bowl. Lightly push fruit to extract as much liquid without pushing pulp through; discard fruit. Refrigerate, uncovered, until chilled, at least 1 hour or up to 2 weeks. Clean and dry saucepan. Stir lime juice into chilled syrup.
- While mango syrup is chilling, bring 1 cup sugar, 1 cup strawberries, and remaining 1 cup water to a simmer in same saucepan over medium-high, stirring occasionally. Reduce heat to medium-low to maintain a gentle simmer; simmer, stirring occasionally, for 15 minutes. Strain strawberry mixture through a fine mesh sieve set over a small, heatproof bowl. Lightly push to extract as much liquid without pushing pulp through; discard fruit. Refrigerate, uncovered, until chilled, at least 1 hour or up to 2 weeks. Clean and dry saucepan.
- While strawberry syrup is chilling, bring coconut milk and remaining 1 cup sugar to a simmer in same saucepan over medium; cook, stirring constantly, until sugar melts, about 1 minute. Transfer sweetened coconut milk to a small heatproof bowl and refrigerate, uncovered, until chilled, at least 1 hour or up to 2 weeks.
- Process ice in food processor, until fluffy and a shaved ice consistency, about 1 minute; set aside.
- Place ice cream in bottom of an 8-ounce serving dish. Spoon ice over top of ice cream. Pour 1 tablespoon of each syrup in three sections over top of ice. Drizzle with sweetened condensed milk, and garnish with additional mango and strawberry, if desired.
