Old Fashioned Peach Cobbler
Ingredients
- 2.5 cups all-purpose flour
- 4 tablespoons white sugar, divided
- 1 teaspoon salt
- 1 cup shortening
- 1 large egg
- 0.25 cup cold water
- 1 tablespoon butter, melted
- 3 pounds fresh peaches – peeled, pitted, and sliced
- 0.75 cup orange juice
- 0.25 cup lemon juice
- 0.5 cup butter
- 2 cups white sugar
- 1 tablespoon cornstarch
- 1 teaspoon ground cinnamon
- 0.5 teaspoon ground nutmeg
Steps
- Have the ingredients ready.
- Start the crust by sifting the flour with 3 tablespoons sugar and the salt into a medium bowl. Use a pastry blender to cut in the shortening until you have coarse crumbs.
- Whisk the egg and cold water together in a small bowl and sprinkle the mixture over the flour mixture. Bring it together with your hands into a ball of dough, wrap it in plastic wrap and refrigerate for 30 minutes.
- Set the oven to 350 degrees F (175 degrees C) to preheat. Roll 1/2 of the chilled dough to a thickness of 1/8-inch.
- Use this dough to line a 9×13-inch baking dish across the bottom and halfway up the sides. Bake it in the preheated oven for about 20 minutes, until golden brown.
- To begin the filling, combine the peaches, orange juice and lemon juice in a large saucepan. Add the butter and cook over medium-low heat until it has melted.
- Combine the sugar, cornstarch, cinnamon and nutmeg in a bowl, then stir them into the peaches until mixed together. Pour the filling into the baked crust.
- Roll out the remaining dough to 1/4-inch thick and cut strips that are 1/2-inch wide.
- Arrange the strips in a woven lattice over the peaches. Scatter 1 tablespoon sugar over the lattice and drizzle it with melted butter.
- Put the cobbler in the preheated oven and bake for 35 to 40 minutes, until the top crust is golden brown.
- Enjoy the finished cobbler.
