Oatmeal Raisin Cookies
Ingredients
- 0.75 cup butter, softened
- 0.75 cup white sugar
- 0.75 cup packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1.25 cups all-purpose flour
- 1 teaspoon baking soda
- 0.75 teaspoon ground cinnamon
- 0.5 teaspoon salt
- 2.75 cups rolled oats
- 1 cup raisins
Steps
- Have every ingredient ready, then heat the oven to 375 degrees F (190 degrees C). Cover two cookie sheets with parchment paper or fit them with silicone liners.
- In a large bowl, beat the butter and both the white and brown sugars to a smooth, creamy texture. Add the eggs and vanilla and beat until the mixture is fluffy.
- Combine the flour, baking soda, cinnamon and salt, then beat this dry mixture into the butter mixture a little at a time. Mix in the oats and raisins. Place teaspoonfuls of the batter on the lined cookie sheets, leaving 2 inches between them.
- Put the sheets in the preheated oven and bake to a golden brown color for 8 to 10 minutes, exchanging their rack positions halfway through. Take them out and leave the cookies on their sheets for 1 to 2 minutes; then move the cookies to a wire rack and allow them to cool fully.
