Ingredients

  • 750 grams mutton
  • 300 grams onion
  • 2 pods garlic
  • 3 tbsp coriander powder
  • 4-6 dry red chillies
  • 4-6 cloves
  • 4 green cardamom
  • 1 black cardamom
  • 1/4 mace
  • 8-10 peppercorns
  • 2 inch cinnamon stick
  • 1 tsp cumin seeds
  • Salt to taste
  • 1/2 cup cooking oil

Steps

  1. Drain the mutton after washing it, then cut the onions into slices and remove the garlic cloves' skins.
  2. Put oil in a pressure cooker and heat it. Add all the whole spices except the garlic, and wait for them to crackle.
  3. Sauté the sliced onion in the cooker until light golden.
  4. Put in the mutton and cook until its liquid has dried up.
  5. Follow with the garlic cloves and coriander powder, and sauté for 2 minutes. Pour in 250 ml water, add salt and let the water boil.
  6. Cook under pressure over medium heat for 6-7 minutes, then allow the pressure to release on its own.
  7. If any liquid is left, let it cook off and sauté for 3-4 minutes over medium heat.
  8. Turn off the heat and leave for 5 minutes; the mutton stew is then ready to serve.
