Ingredients

Main Ingredients

  • 2 cups water
  • 4 teaspoons raw sugar or add as per taste
  • 2 teaspoons black tea – granules or tea leaves, preferably Assam CTC tea
  • ¼ cup milk or add as per taste

Spices (Masala)

  • 1 inch cinnamon – true cinnamon and not cassia cinnamon
  • 2 to 3 green cardamoms
  • 2 cloves
  • 1 inch ginger

Steps

  1. Put the cinnamon, green cardamoms, cloves and peeled ginger in a mortar for crushing with a pestle.
  2. Crush the spices to a coarse texture and set them aside.
  3. Heat the water in either a saucepan or a small handled pan.
  4. Add the crushed spices once the water has reached a boil.
  5. Keep the spices boiling in the water for 2 to 3 minutes.
  6. Sweeten to taste. The recipe author usually adds 4 teaspoons of raw sugar, and you can use more or less.
  7. Add 2 teaspoons of Assam tea powder and boil for a minute. Adjust the boiling time for your preferred strength, allowing a few more minutes if you want a stronger, more intense tea.
  8. Boil the tea for 2 to 3 minutes after adding the milk.
  9. With chilled milk, boil it together with the tea for 2 to 3 minutes. With hot milk, turn off the heat after adding it.
  10. Pour through a tea strainer so the chai goes straight into the cup.
  11. Serve the masala chai while hot, with your choice of Indian snacks, cookies or biscuits.
