Ingredients

  • 2 cups sifted all-purpose flour
  • 1 cup confectioners' sugar
  • 1 cup butter, melted
  • 4 eggs
  • 2 cups white sugar
  • 1 teaspoon baking powder
  • 0.25 cup all-purpose flour
  • ½ teaspoon salt
  • 0.625 cup lemon juice
  • 1 tablespoon finely grated lemon juice

Steps

  1. Preheat the oven to 350 degrees F (175 degrees C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. Stir 2 ¼ cups flour and confectioners’ sugar together in a medium bowl; blend in cooled melted butter until dough is crumbly but holds together when pressed.
  3. Press mixture evenly into the prepared pan. Bake until golden and set, about 20 minutes.
  4. Meanwhile, whisk eggs in a large bowl until pale and frothy. Combine white sugar, baking powder, ¼ cup flour, and salt in a separate bowl; stir sugar mixture into eggs until smooth. Whisk in lemon juice and zest until combined.
  5. Pour filling over hot crust. Bake in the preheated oven until center is just set and no longer jiggly, about 20 minutes.
  6. Cool completely in the pan on a wire rack. Use parchment overhang to lift bars from pan before cutting into squares.
  7. Enjoy!
