Lemon Custard Pie
Ingredients
- 1.75 cups milk
- 1.5 cups white sugar
- 0.5 cup cornstarch
- 0.5 teaspoon salt
- 4 eggs, separated
- 1 cup lemon juice
- 3 tablespoons butter
- 2 teaspoons vanilla extract, divided
- 1 (9 inch) baked pie shell
- 2 tablespoons brown sugar
Steps
- Mix the milk, sugar, cornstarch, and salt in a saucepan over medium-high heat. Stir constantly for 8 to 10 minutes, until thick like pudding, then take off the heat.
- Whisk the egg yolks in a bowl until smooth, add the lemon juice, and whisk again until smooth.
- Put the pudding back on the heat and slowly stir in the egg yolk mixture. Raise the heat to high and boil for at least 2 minutes while stirring constantly. Stir in the butter and 1 teaspoon vanilla extract, then pour the thick custard into the pie shell.
- Heat the oven to 400 degrees F (200 degrees C).
- In a large bowl, combine the egg whites, remaining vanilla extract, and brown sugar. Whip with an electric mixer to make a fluffy meringue and spread it over the custard.
- Bake the pie in the preheated oven for about 10 minutes, until the meringue is golden brown. Let it cool, then chill for at least 1 hour before serving.
