Steps

Sugar Syrup Recipe:

  1. For the syrup, take 1½ cup sugar with ¼ cup water.
  2. Stir until the sugar dissolves completely.

Khaja Preparation Recipe:

  1. Put 1 cup all purpose flour in a large bowl and add 2 tbsp ghee.
  2. Crumble the mixture into a well-moistened dough.
  3. Pour in ¼ cup water and knead for 5 minutes.
  4. Add water as required while kneading to a smooth, soft dough.
  5. Oil the dough, cover and leave for 15 minutes.
  6. After the 15-minute rest, knead gently.
  7. Dust the dough with flour and roll out with a rolling pin.
  8. Roll as thinly as possible, then dust.
  9. Trim the sides into a large square or rectangle.
  10. From one side, begin rolling tightly.
  11. Dust a flour layer on each roll to prevent them sticking together.
  12. When you reach the end, brush the corner with water and finish rolling. Water helps keep it from unravelling during frying.
  13. Roll the cylinder tightly to eliminate air gaps.
  14. Cut into 1-inch pieces, or choose another size if preferred.
  15. Use your finger to flatten each piece slightly without disturbing the layers.
  16. Start frying the khaja in oil that is medium hot.
  17. Fry over a low flame for about 3 minutes.
  18. Continue frying over a medium flame until crisp and golden.
  19. Drain excess oil on kitchen paper.
  20. Without delay, drop the fried khaja into the hot sugar syrup.
  21. Leave in the syrup to soak for 5 minutes.
  22. Store madata khaja in an airtight container for 10-15 days and enjoy.
