Karen’s Fruit Pizza
Ingredients
- 1 (18.25 ounce) package yellow cake mix
- 2 eggs
- 0.25 cup vegetable oil
- 2 (8 ounce) packages cream cheese, softened
- 2 cups confectioners' sugar
- 1 teaspoon almond extract
- 0.5 cup sliced fresh strawberries, or as desired
- 0.5 cup diced pineapple, or as desired
- 0.5 cup sliced fresh peaches, or as desired
- 0.5 cup white sugar
- 0.5 cup orange juice
- 0.25 cup lemon juice
- 0.25 cup water
- 2 tablespoons cornstarch
Steps
- Preheat the oven to 400 degrees F (200 degrees C). Grease two 12-inch pizza pans.
- Make crust: Mix together cake mix, eggs, and oil in a large bowl until batter is just mixed. Divide mixture between the two prepared pizza pans and press down evenly.
- Bake in the preheated oven until lightly browned, about 10 minutes. Remove crusts from the oven and cool completely, at least 30 minutes.
- Make cream cheese layer: Whisk together cream cheese, confectioners' sugar, and almond extract in a large bowl until smooth; spread onto cooled crusts.
- Arrange fruit: Place strawberries, pineapple, and peaches on cream cheese layer.
- Make glaze: Combine white sugar, orange juice, lemon juice, water, and cornstarch in medium saucepan over medium heat; cook and stir until glaze is thickened, 5 to 10 minutes. Remove the saucepan from heat and refrigerate glaze until cooled, about 20 minutes.
- Drizzle glaze over fruit and refrigerate pizza until chilled, at least 30 minutes.
