Italian Bruschette
Ingredients
- 12 Slices Ciabatta or Baguette
- 4-5 tbsp Olive oil
- 3 Big sized Garlic finely chopped
- as needed Cheese (Parmesan/ Cheddar/ Mozzarella any you have) (optional)
- as required Italian mixed herb seasoning (optional)
- 200 gms Cherry Tomatoes or any big sized tomatoes chopped chunky
- 3 big sized Garlic Finely chopped
- as required Few Basil leaves chopped (I have used Frozen Basil here)
- 3-4 Tsp Balsamic vinegar
- 1-2 tbsp Olive oil
- as per need Salt as per taste
- 1/2 Tsp Freshly crushed Black peppercorns
- 1 small onion chopped (optional)
- 1 Chilli chopped (optional)
- 1 small Bell pepper (any color) (optional)
- as required Olive oil
- as needed Balsamic vinegar or Balsamic Glaze
Steps
- After preparing the vegetables as listed, mix all the topping ingredients and leave that mixture aside. Combine the olive oil and garlic as well.
- Meanwhile, prepare the baguette: preheat the oven to 180°C, cut the baguette into slices and brush them on both sides with the garlic-olive-oil mixture. Arrange the slices on a parchment-lined baking tray, add a little cheese to each one and sprinkle on Italian herbs.
- Toast the baguette slices to a crisp, golden brown finish in the preheated oven, allowing approx 10 minutes. Put the prepared topping on the toasted slices and serve immediately.
