Steps
- Chinese dishes are super quick to make but the process takes the time. Whenever you are making any chinese recipe make sure you are done with all the chopping and cutting before you start cooking. In this soup recipe you can make as many veggies as you like or have in your pantry. You can use cabbage, mushroom, paneer, tofu, broccoli or cauliflower florets. Just make sure they are finely diced or cut in fine juliennes. This recipe demands for more garlic but if you don't like you can use less.
- I'm using colour bell peppers cut in fine juliennes you can use any colour or just one colour bell peppers. Carrots are cut in juliennes. Onion is finely diced. Spring onion whites and greens are finely and separately chopped. Ginger, garlic and green chillies are chopped combined. I'm using chilli oil for that I cook the oil till it's piping hot add 1 tbsp chilli pieder to it allow it to rest for 10 minutes then seive it. It's optional you can use any oil. My all preps are ready. Let's cook.
- In a wok add oil when it heats up add the chopped ginger, garlic and green chillies then saute for a minute later add the fine chopped onion. Cook again for a minute then add carrots, peas, corns and cook for 2 minutes. Then add red chilli flakes, black pepper powder and white pepper powder combine them well and then add the colourful bell peppers. Saute for a minute then add a litre of water to it and mix well. Allow it to boil. Add salt and sugar to it along with soy sauce, white vinegar.
- Red hot chilli sauce and tomato sauce. Mix them all well. When it start to boil cook for 2 minutes then lower the flame and add slurry which we have made by adding 2 tbsp cornstarch or corn flour or all purpose flour with 4 tbsp water. Add the slurry slowly and continuously stir the soup to avoid lumps. Now cover it and Cook it on low flame for 5 minutes then add chopped spring onion greens and whites mix it and off the flame. You can serve at this time also but I'm serving it with fried noodles
- For the fried noodles boil 2 packets of normal noodles. Boil it till 80% done. Strain all the excess water then in a pan add 2 tbsp oil. When the oil heats up add a small amount of noodles to it. Try to give it a round shape. Cook it on high flame. Keep an eye else it will burn. Once it gets a golden brown colour flip it to another side and cook it till get a brown side there too. It will be so crispy by that time just like the readymade fried noodles. Boil the soup again to make it piping hot.
- Serve it in a big bowl with some spring onion greens and whites on top. You can even add coriander leaves on top of it. Place some fried noodles on top of it and enjoy it with your loved once. Make this hot soup in this cold weather and enjoy it at the comfort of your home with your friends and family. Happy Cooking 😍
