Ingredients

  • 2 cups whole almonds
  • 0.25 cup white sugar
  • 0.5 teaspoon kosher salt
  • 3 tablespoons honey
  • 3 tablespoons water
  • 1 tablespoon almond oil

Steps

  1. Have all of the ingredients ready.
  2. Arrange the almonds in one layer on a baking sheet and put the sheet in a cold oven.
  3. Switch the oven on to 350 degrees F (175 degrees C). Bake for 12 to 15 minutes, stirring occasionally, until the almonds are light tan and fragrant. They will keep cooking after being taken out.
  4. During baking, combine the sugar and salt in a small bowl, then scatter 1 tablespoon of this sugar mixture into a large bowl.
  5. Combine the honey, water and almond oil in a saucepan, stirring them together, and bring the mixture to a boil. Add the almonds and cook for about 5 minutes, stirring, until they absorb all the liquid.
  6. Tip the coated almonds into the large bowl containing the sprinkled sugar mixture. Add the rest of the sugar mixture over the nuts and toss until evenly coated.
  7. Leave the almonds spread out on waxed paper until completely cool. Keep them at room temperature in a tightly covered container or a resealable plastic bag.
