Ingredients

  • 0.5 cup butter
  • 4 cloves garlic (minced)
  • 0.5 cup mustard
  • 0.33 cup honey
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon apple cider vinegar
  • 0.5 teaspoon kosher or sea salt (plus more for seasoning)
  • 0.5 teaspoon black pepper (plus more for seasoning)
  • 2 pounds chicken wings (split)
  • 1 cup all-purpose flour (for dredging)
  • Vegetable oil (or other high flashpoint oil) (for frying)

Steps

  1. Melt butter in a medium saucepan over medium. Stir in garlic and cook until the garlic is lightly browned, 1 to 2 minutes. Whisk in mustard and honey, Worcestershire sauce, apple cider vinegar, salt, and pepper. Reduce heat to low and simmer the sauce until thickened, 3 to 5 minutes. Set aside.
  2. Pat chicken wings dry with paper towels. Generously season the chicken with salt and pepper. Dredge the wings in flour, shaking off any excess flour.
  3. Heat 3 inches of oil to 375°F in a large pot or deep fryer. In batches, fry the chicken wings until golden brown, 8 to 10 minutes. Place on a paper towel-lined rimmed baking sheet to drain. Continue frying the chicken in batches until all of the wings are cooked.
  4. Toss the wings with the honey mustard sauce in a large bowl and serve warm with leftover sauce for dipping.
