Steps

  1. Blend soaked cashews with water to make a smooth cashew paste, then use a deep-bottom pan or kadai to make khoya. Cook on low to medium flame, slowly elongating the paste until oil separates.
  2. Let cashew khoya cool for 20min before making filling mixture
  3. Mix flours, refined coconut oil, then add coconut milk knead well after
  4. Add little by little warm water to knead a stiff dough. Rest 20 min.
  5. Lightly roast suji on low flame until aromatic, not brown. Mix khoya, nuts, seeds, coconut, roasted suji, cardamom powder, nutritional yeast, raisins, and date syrup for filling..add little extra roasted suji to make filling little crumbly.
  6. Divide dough, roll a big dough piece to make it evenly then cut into 4-5 inch circle roti with cutter or bowl.
  7. Place the 1tbsp of filling in center. Brush edges with coconut milk and date syrup, then fold, press, and crimp to seal….
  8. Create a design using a gujiya mould or cutter. I make it by hand, as my mommy taught me; it’s so beautiful like flowers.
  9. For bake gujiya first Brush a little oil then brush gujiya with coconut milk-date syrup glaze before baking.
  10. Bake at 170°C for 20min (flip every gujiya after 10min can also brush oil or glaze so they bake evenly both side)until golden, or fry in oil if preferred. Enjoy! Happy Healthy Holi 🌺💚😉
