Ingredients

  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • 2 large bananas [3 or 4 cup mashed banana]
  • 3 tablespoons peanut butter
  • 2 tablespoon coconut oil
  • ¼ cup greek yogurt
  • 3 tablespoons honey
  • 1 teaspoon vanilla
  • 1 large egg
  • ½ cup semi-sweet chocolate chips

Method

  1. Preheat oven to 375 F degrees.
  2. Spray a 12 count muffin pan with non-stick spray and set aside.
  3. In a bowl mix together whole wheat flour, baking powder and baking soda. Set aside.
  4. Using hand whisk, mix together mashed bananas and egg.
  5. Add peanut butter, coconut oil and vanilla extract.
  6. Add greek yogurt and mix. Also add the honey.
  7. Stir in the dry ingredients and mix. Be careful not to overmix.
  8. Fold in the chocolate chips.
  9. Fill the muffin liners till 3/4 full.
  10. Bake at 375 F degrees for 15-17 minutes or till a toothpick inserted in the center comes out clean.
  11. Transfer on to a wire rack to cool completely.
