- 3 pieces lemon

Steps
- First, wash all the vegetables thoroughly and cut them up.
- Spinach puree •••• We will bring out the green color in the dish naturally. For this, we will boil water, and as soon as the water starts boiling, we will add the spinach and cook it for 2 minutes.
- After 2 minutes, drain the spinach using a sieve to remove the excess water (save this healthy water for later use). Immediately transfer the spinach to ice water. This process helps retain the spinach's vibrant green color. Now, blend it to make a puree.
- On the other hand, put all the chopped vegetables in a pressure cooker, add salt and 1+1/2 cups of water, and cook for two whistles.
- Now, heat two tablespoons of butter and one tablespoon of oil in a pan. Adding oil prevents the butter from burning. Then, add ginger and green chilies and sauté for 30 seconds. Now, sauté the onions until they turn light pink.
- Now, add the pureed tomatoes to the onions and sauté until the raw taste of the tomatoes is gone.
- Now, add all the boiled vegetables and the mentioned spices and mix well. Add a little salt to taste (remember that salt was also added while cooking the vegetables). Now, mash the vegetables thoroughly with a potato masher. After adding the spices, cover and cook the bhaji for 5 to 6 minutes, adding water as needed. Finally, add the spinach puree.
- Add the spinach puree and mix well, cooking for 1-2 minutes. Since the puree is already cooked, it doesn't need to be cooked for too long. Now add the fresh coriander and grated paneer and turn off the gas after 1-2 minutes. Add lemon juice for a tangy flavor (optional).
- Apply butter to a griddle and toast the bread rolls. If desired, sprinkle a little spice mix on the rolls before toasting; this will make the rolls flavorful.
- Hot green vegetables are ready.
- Serve with green coriander and mint chutney, lemon, and chopped onions.
