Ingredients

  • 1 pound ground lamb
  • 4 teaspoons minced garlic
  • 1 tablespoon finely chopped fresh mint
  • 1 tablespoon finely chopped fresh dill
  • 0.75 teaspoon salt
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon smoked paprika
  • 0.25 teaspoon ground cinnamon
  • 0.25 teaspoon cayenne pepper
  • 1 (4 ounce) goat cheese log
  • 4 (2 ounce) brioche buns, split and toasted
  • 2 cups loosely packed arugula
  • 0.25 cup prepared garlic aioli
  • 0.25 cup pickled red onions, or to taste

Steps

  1. In a large bowl, mix the ground lamb with garlic, mint, dill, salt, cumin, smoked paprika, cinnamon and cayenne, stopping as soon as combined.
  2. Make four 3-inch patties from the lamb mixture. Cut the goat cheese log into 4 equal portions and put one in the middle of each patty. Carefully wrap the edges around the cheese to enclose it, then gently flatten each patty to 4 inch.
  3. Heat an outdoor grill on high, 450°F to 650°F, or heat a stovetop griddle to medium-high. Oil the grate or griddle.
  4. Grill the patties until a thermometer of the instant-read type inserted into their centers reads 160 degrees F (71 degrees C) and the goat cheese is melted, about 4 to 5 minutes on each side.
  5. Offer the burgers in the buns with arugula, aioli and pickled red onions.
