Goan Veg Caldin
Ingredients
- 2-3 tbsp Coconut Oil
- 2-3 medium sized chopped Onions
- 2 sprigs Curry Leaves
- 3-4 chopped Green Chillies
- 1-2 small chopped Tomatoes
- 1/2 tsp Cumin powder
- 1 tsp Coriander powder
- 1/2 tsp Kashmiri Red Chilli powder
- 1/2 tsp Turmeric powder
- 150 ml thin Coconut Milk
- 1 cup sliced Zucchini
- 1/2 cup Cauliflower florets
- 1/2 cup Green Beans
- 2 cubed Potatoes
- 1/2 cup chopped Carrots
- 1 tbsp Tamarind paste
- 1 tsp Sugar
- 1 tsp Salt or to taste
- 2-3 tbsp chopped Coriander Leaves
- 100 ml thick Coconut Milk
Steps
- Heat coconut oil in a pan. Add curry leaves, green chillies and chopped onions. Saute until translucent and then add tomatoes. Saute until tomatoes are soft and done.
- Add all the vegetables now. Stir well.
- Add turmeric, red chili, coriander, and cumin powders. Mix to coat the veggies.
- Pour in thin coconut milk and salt. Simmer until vegetables are tender. Halfway through also add the tamarind paste and sugar. Mix well.
- Once the veggies are done, add thick coconut milk or cream. I have used the coconut cream. Gently heat without boiling, then remove from heat. Garnish with chopped coriander leaves.
- Serve hot with rice or bread. It's absolutely refreshing and flavourful. Enjoy!
