Ingredients

  • 1/2 cup foxtail millet, soaked for 2-3 hours
  • 3/4 cup mixed veggies (beans, carrot, peas, etc. chopped)
  • 2 tbsp. ghee
  • 1 tbsp. oil
  • 1-2 dry red chilies
  • 1 tsp. mustard seeds
  • 1 tsp. urad dal (split black gram)
  • 1 tsp. ginger, chopped
  • 1 tsp. garlic, chopped
  • 1-2 onion, sliced
  • 1 sprig curry leaves
  • 1-2 slit green chilies
  • salt to taste
  • 1 tsp. lime juice
  • 1 tbsp. chopped coriander leaves

Steps

  1. Boil enough water with 1/2 tsp. salt, then add the soaked, drained millet. Cook over medium heat until soft, drain and leave to cool.
  2. Heat the oil and ghee in a pan and temper the mustard seeds and dry red chilies. After the spluttering stops, add urad dal, ginger and garlic, and sauté for a few seconds.
  3. Add the onion, curry leaves and green chilies, and stir-fry to a light-brown color. Thoroughly mix in all the chopped vegetables and salt, then cover and cook over low heat until every vegetable is soft.
  4. Put in the millet and mix everything thoroughly. After sautéing for 1-2 minutes, turn off the flame.
  5. Finish with a dash of lime and a coriander-leaf garnish. Serve on its own or with raita.
